Ingredients

3-5 lb grass fed beef chuck roast
2 tablespoons beef tallow or olive oil
2 tablespoons grass fed butter
Salt and freshly ground black pepper

1 bottle (750ml) Bordeaux wine (any full-bodied red wine works well)
2 cups grass fed beef bone broth
2 yellow onions, cut in half
2 carrots, cut into thirds
1 head garlic, cut in half crosswise
2 celery stalks, cut into thirds
Several sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
Instructions
Preparing the Chuck Roast
Remove the grass fed chuck roast from refrigeration 30-45 minutes before cooking to bring to room temperature.
Pat the beef chuck roast completely dry with paper towels. Season generously on all sides with salt and pepper.
Preheat your oven to 275°F.
Searing and Braising
Heat a large Dutch oven on the stove over medium-high heat. Add the beef tallow (or olive oil) and grass fed butter.
Once the fat is hot and butter melted, sear the chuck roast on all sides until nicely browned, about 3 minutes per side.
Remove the roast to a plate.
Add the onions, carrots, garlic, and celery to the pot. Cook, stirring occasionally, until the vegetables begin to soften and brown, about 10 minutes.
Add the Bordeaux wine and use a wooden spoon to scrape the bottom of the pan. Add the grass fed beef bone broth, thyme, rosemary, and bay leaves.
Bring to a simmer, then place the roast back into the pot. Cover and transfer to the oven.
Slow Cooking to Perfection
Cook for 3 to 4 hours (3 hours for a 3 lb roast, up to 4 hours for a 5 lb roast) until the meat is fork-tender and falling apart. This makes a perfect Sunday pot roast—simply prepare it in the morning before church, and you'll return home to a house filled with incredible aromas and a meal that's ready to serve.
Remove from the oven. Take the roast out of the pot and set aside on a cutting board.
Strain the braising liquid, discarding the solids. Return the liquid to the pot and bring to a boil. Cook until the sauce is reduced by half and slightly thickened.
