About This Cut
The brisket point is the fattier, more marbled half of the brisket. More forgiving to cook, with richer flavor. The classic cut for burnt ends. Grass-fed beef from pasture-raised cattle develops a cleaner, more robust flavor profile compared to grain-finished alternatives—you're tasting beef the way it was meant to be, before feedlots became the norm.
How to Prepare
For best results, smoke at 225-250°F until internal temp reaches 195-205°F. For burnt ends, cube after smoking, toss with sauce, and smoke another 1-2 hours. The higher fat content makes the point more forgiving than the flat. Grass-fed beef runs leaner than conventional beef. Rest before slicing or cubing.
