About This Cut
The rump roast comes from the round primal, the rear of the animal. Lean with robust beef flavor, becomes tender with proper slow cooking. Excellent for pot roast or shredded beef. Grass-fed beef from pasture-raised cattle develops a cleaner, more robust flavor profile compared to grain-finished alternatives—you're tasting beef the way it was meant to be, before feedlots became the norm.
How to Prepare
For best results, braise in liquid at 275-300°F for 3-4 hours. Sear all sides first, add liquid to come halfway up the roast. Grass-fed beef runs leaner than conventional beef—don't skip the braising liquid. Cook until fork-tender. Can also be slow-roasted at low temperature for slicing.
