How to Prepare
For best results, smoke at 225-250°F for 1-1.5 hours per pound until internal temp reaches 195-205°F. Trim fat cap to 1/4 inch. Season with salt and pepper or your favorite rub. Grass-fed brisket runs leaner—watch for drying. Wrap in butcher paper when bark sets to preserve moisture. Rest for at least 1 hour before slicing.
