I have a friend, Thomas B., who is probably the most disciplined person I know when it comes to seed oils. He uses the Seed Oil Scout app religiously before he goes anywhere. For a long time I thought he was being excessive. But then I started actually looking at what was in our cabinet. A big bottle of canola oil. Had no idea how it was made. Just figured "vegetable" meant it was fine. After going through enough elimination diets over the years, I've learned to stop assuming.
Here's the real breakdown on canola vs olive oil vs beef tallow: what each one actually is, what happens when heat gets involved, and which one belongs in your kitchen.
What Is Canola Oil, Actually?
Starts with rapeseed, a genetically modified plant developed in Canada in the 1970s. They renamed it canola for marketing: "Canadian oil, low acid." Before that it was just called rapeseed oil.
Here's where it gets less appealing. The seeds get crushed and then bathed in a petroleum-derived solvent called hexane to extract every last drop of oil. Then comes degumming, bleaching, and deodorizing. The deodorizing step exists because the oil smells rancid by that point. Oxidation has already started. The neutral flavor people associate with canola oil is engineered through this refining process, not something that naturally occurs.
What ends up on grocery store shelves is heavily processed. Stripped. It's not neutral because nothing happened to it. It's neutral because everything was done to it.
What Is Olive Oil?
Different category entirely. Olive oil is a fruit oil, pressed from whole olives. Cold-pressed extra virgin olive oil involves no heat, no hexane, no chemicals. It keeps its polyphenols, its antioxidants, its flavor. That fruity, grassy, occasionally peppery taste you get from a good extra virgin olive oil is coming from something real.
The fat profile is mostly monounsaturated, specifically oleic acid. Structurally stable. Resistant to oxidation in a way that polyunsaturated fats simply aren't. Smoke point on extra virgin olive oil runs 375-405 degrees F depending on the oil, and high-oleic varieties handle more heat than that.
The short version: olive oil holds up. It doesn't fall apart into byproducts when you cook with it. That's the thing that actually matters.
What Is Beef Tallow?
Rendered fat from cattle. Specifically, from the fat of grass-fed beef. People have been cooking with it for thousands of years. It's what your great-grandmother reached for before someone convinced her that vegetable oil was better.
The fatty acid profile is mostly saturated fat and monounsaturated fat, with very little polyunsaturated fat. That's exactly what you want from a cooking fat meant to handle high heat. Smoke point lands around 400-420 degrees F. It doesn't oxidize. It doesn't generate the toxic breakdown products that polyunsaturated fats do under heat.
Grass-fed tallow also carries fat-soluble vitamins: A, D, E, K2, and conjugated linoleic acid (CLA). The tallow from grass-finished cattle is a different product than generic commodity tallow. The animals it comes from ate what they were designed to eat, and the fat composition reflects that.
The Smoke Point Myth Is Worth Addressing
The argument for canola oil almost always starts here. High smoke point, great for cooking. But smoke point only tells you when the oil starts visibly smoking. It says nothing about what's happening to the oil's structure before that.
Polyunsaturated fats, the dominant fatty acids in canola oil, begin oxidizing at temperatures well below the smoke point. That oxidation produces lipid hydroperoxides and reactive aldehydes. The 2025-2030 Dietary Guidelines Advisory Committee's scientific report addressed this directly: cooking with linoleic acid-rich oils produces significantly more of these byproducts than cooking with oleic acid or saturated fat-containing oils. The long-term health consequences of chronic exposure to those compounds haven't been fully sorted out, but the compounds themselves have been linked to cardiovascular disease and chronic inflammation.
Olive oil and tallow don't behave this way under normal cooking temperatures. Their fatty acid profiles are more stable. That stability is what makes a cooking fat actually safe to cook with, not a number on a smoke point chart.
Canola vs Olive Oil vs Beef Tallow: How They Actually Compare
Let's get specific, because the side-by-side matters.
Production. Canola comes out of a solvent extraction and refining process: hexane, bleach, deodorizing. Olive oil gets pressed from whole fruit. Tallow gets rendered from animal fat. Two of these processes involve nothing exotic. One of them requires a chemical plant.
Fatty acids. Canola is roughly 63% monounsaturated, 28% polyunsaturated (mostly omega-6 linoleic acid), 7% saturated. Olive oil runs about 73% monounsaturated, 11% polyunsaturated, 14% saturated. Grass-fed beef tallow lands around 50% saturated, 42% monounsaturated, 4% polyunsaturated. The less polyunsaturated fat, the more stable the oil under heat. Tallow wins that by a wide margin.
Flavor. Canola is neutral, almost deliberately so. Nothing to recommend it or argue against it on flavor. Olive oil brings a fruity, grassy character that's genuinely good in salad dressings, as a finishing drizzle, in baked goods where you want something interesting. Tallow has a savory depth that makes seared meat taste like seared meat should.
Heat. Extra virgin olive oil handles sauteing just fine. High-oleic varieties handle higher heat. Tallow was built for a screaming-hot cast iron. Canola technically has the highest smoke point of the three, but a high smoke point on a polyunsaturated fat is not the reassurance it sounds like.
Cost. Canola is cheap. That's its main selling point and largely why it colonized the American kitchen. Good extra virgin olive oil costs more. Quality grass-fed tallow is priced in a similar range, and it's a premium fat worth treating like one. That said, one of tallow's underappreciated advantages is that it can be reused. After cooking, strain out any food particles while it's still liquid, let it cool, and you've got clean tallow ready for the next round. A bottle of canola oil gets used once and thrown out. Good tallow stretches a lot further.
What the 2026 Science Says
The scientific foundation behind the 2025-2030 Dietary Guidelines was unusually direct on this topic. The committee recommended cooking with peroxidation-resistant oils, explicitly naming olive oil. And it listed butter and beef tallow as alternatives, which represents a real shift from the animal fats messaging of the past several decades.
The same report flagged that linoleic acid now makes up about 7.6% of total food energy in the American diet. Several times higher than pre-industrial or traditional diets. The source isn't nuts and seeds. It's the refined seed oils that replaced animal fats in the U.S. food supply starting in the mid-20th century. The health consequences of that shift are still being studied. The report called for urgent research. That's not a ringing endorsement of the status quo.

The heart disease angle deserves a moment too. The case for canola oil as heart-healthy has always rested heavily on its effect on LDL cholesterol. But it's fair to ask who funded that research, because after everything that's come out since 2020 about industry-influenced science, I have a hard time taking "processed food is healthy" claims at face value. A product that requires hexane extraction, industrial bleaching, and chemical deodorizing isn't something I'm willing to accept as healthy just because a funded study says so. This is exactly the kind of thing Robert F. Kennedy Jr.'s MAHA movement has been calling out, the long track record of industry-backed research that shaped dietary guidance in ways that served food companies more than families. The science on LDL as a standalone predictor of cardiovascular outcomes is also shakier than the grocery store labels imply. Controlled trials replacing saturated fat with linoleic acid-rich oils haven't consistently delivered the health benefits those observational studies promised.
The Hormone and Inflammation Connection
There's another angle Thomas brought up at lunch once that stuck with me. The omega-6 to omega-3 ratio in the modern diet has gotten badly out of balance, largely because of seed oils. Traditional diets ran closer to 4:1 or even 1:1. Today's American diet is often north of 15:1 or 20:1, depending on what you're eating.
That imbalance matters because omega-6 linoleic acid and omega-3s compete for the same metabolic pathways. A heavily omega-6-skewed diet contributes to systemic inflammation. That inflammation is associated with endocrine disruption, disrupted hormone signaling, and a range of chronic conditions that didn't show up at the same rates in populations eating traditional animal fats.

What We Actually Use

The Verdict
Olive oil belongs in your kitchen. Extra virgin, minimally processed, high in monounsaturated fat and polyphenols, supported by decades of research on heart health and inflammation. Use it cold, use it for light cooking, drizzle it, dress with it. It earns its place.
Beef tallow from grass-fed cattle belongs back in your kitchen, where it was before industrial food replaced it with cheaper, chemically extracted alternatives. For high-heat cooking, it's the most stable fat you can use. And unlike seed oils, the fatty acid profile actually works with your body instead of against it.
Canola oil is heavily refined, extracted with hexane, made from a genetically modified rapeseed crop, and high in polyunsaturated fats that begin oxidizing before the smoke point. The neutral taste is a processing artifact, not a feature. There are better options for every single use case.
