How the Shares Work
You reserve a share of the animal: a whole cow, a half cow, or a quarter cow. A half and a whole are cut to your choices on a cut sheet, and a quarter comes as a balanced split quarter. A quarter runs roughly 75 to 90 lbs of packaged beef, a half 150 to 180 lbs, and a whole 300 to 360 lbs, all steaks, roasts, ground beef, brisket, short ribs, and soup bones, plenty for the carne asada that's part of the food culture here. Your price is based on the hanging weight once the animal is processed, with a fixed deposit set by share size to reserve it.
